Instructions
- Ingredients:- 6 large bell peppers
- 1 lb ground beef or turkey
- 1 cup cooked rice
- 1 cup shredded cheese
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 cup tomato sauce
- 1 tsp salt, 1/2 tsp pepper, 1 tsp Italian seasoning
 
- Prep:- Cut tops off peppers, remove seeds.
- Brown meat with onion and garlic; drain fat.
- Stir in rice, 1/2 cup cheese, tomato sauce, and seasonings.
 
- Stuff & Smoke:- Fill peppers with meat mixture. Top with remaining cheese.
- Place in smoker at 250°F (121°C) for 2 hours, using mesquite or applewood.
 
- Serve:- Garnish with fresh herbs and serve with crusty bread.
